Soup Ingredients :
- 1 Kg chicken, divide to 4 even pieces
- 2.5 Liter water
- 2 tbs cooking oil
- Rice vermicelli, soak till soft
- Potato croquette
- 2-3 Boiled eggs
- Spring of spring onion, chopped
- Sprinf of chinese celery, chopped
- Fried shallot
- 2-3 Lime, cut each in 4
- 8 cloves shallot
- 4 cloves garlic
- 150 Gram roasted peanuts
- 5 cloves shallot, thinly sliced
- 2 springs of chinese celery
- 3 cm ginger, mashed
- 2 sticks cinnamon
- 3 cloves
- 6 cm sugar cane
- 1/4 tsp nutmeg powder
- 2 tbs sweet indonesian soy sauce
- 2 tsp salt, or according to taste
- Bring chicken to boil with chinese celery, shallot. When chicken is cooked, remove from heat. Separate the chicken from the chicken broth. Debone chicken, discard skin, and shred chicken, set aside.
- Heat cooking oil in wok, saute ground spices add to broth.
- Boil broth again, add ginger, cinnamon, cloves, sugarcane, and nutmeg.
- Add sweet soy sauce, salt, let it slimmer, set aside.
- Prepare ina bowl for 1 person : rice vermicelli, potato croquatte, shredded chicken meat (generous), pour the hot soto soup, sprinkle with chopped spring onion, chinese celery and fried shallot.
- Serve with a squirt of lime juice.
